Maremma’s Borlotto Bean
The Maremma Borlotto Bean is a Traditional Agricultural Product (PAT) on the national list approved by the Ministry of Agriculture And Forestry, whose requirements are regulated by the Region’s production regulations Tuscany.
Features
Maremma’s borlotto bean is a climbing bean with dark green, matte leaves and pale pink flower; it is characterized by a rather large pod that can reach the length of 17.5 cm and the width of 1.5 cm.
The seed is large, rosy in color with purple mottles, with a hard texture.
It is produced from April to July.
Cultivation
The sowing takes place in April following a preparation of the soil and a bottom fertilization.
It needs loose and irrigated land.
The collection, in June-July, is manual.
The quality and typical of Maremma’s borlotto bean are given by the peculiarity of the cultivar and the influence of the environment.
It is consumed as a second dish accompanied by red wines.
It has been produced since the 16th century.
The production of this bean was, until a few years ago predominantly hobby type, then, as a result of the increasing demand and the price that this bean appears on the market, its production and marketing has increased.
