Garfagnana’s Yellow Bean
The Garfagnana Yellow Bean is a Traditional Agricultural Product (PAT) on the national list approved by the Ministry of Agriculture And Forestry, whose requirements are regulated by the production regulations of the Tuscany region.
Features
The yellow bean of garfagnana has an oval seed, medium-small in size and yellow color, with a well-marked eye.
It is a crop that does not need support; is produced from May to August.
Cultivation
The seed is selected for harvest by the producers and stored for the following year.
The soil is prepared by doing bottom fertilization; the seed is planted in April, normally it is sown in combination with the formentone, on the same rows.
The traditionality of the product is due to the cultivar of local origin responsible for its particular flavor and appearance.
Traditionally, like all beans, it was one of the main components in the diet of local populations, and was present in many preparations: from the first, such as soups (Gallicano soup) and spelt soup, to contours with cotechino or Cod.
Special combination with the “foal levers”, a typical preparation of the municipality of Gallicano.
