Tuscan

The Tuscan is a Protected Geographical Indication (IGP) present in the national list approved by the Ministry of Agriculture Food and Forestry, the requirements of which are regulated by the production discipline of the Tuscany Region.

Features

The protected geographical indication “Toscano” can be accompanied by one of the following additional geographical mentions: “Seggiano”, “Lucchesi Hills”, “Hills of Lunigiana”, “Hills of Arezzo, “Hills Senesi”, “Florence Hills”, “Montalbano”, ” Pisani Mountains.”

When the extra virgin olive oil with a protected geographical indication “Toscano” is to be used for consumption, it must respond to the following characteristics:
– color: from green to gold yellow with color variation over time;
– smell: fruity accompanied by hint of almond, artichoke, other ripe fruit, leaf green;
– taste: marked fruity.

Variety

The protected geographical indication “Toscano”, without any additional geographical mention, in the olive groves: American, Arancino, Cherry, Crushio, Cluster, Gremignolo, Grossolana, Larcianese, Lazzero, Leccino, Leccio del Horn, Leccione, Madonna impruneta, Marzio, Maurino, Melaiolo, Little name, Moraiolo, Morchiaio, Olivastra Seggianese, Pendolino, Pesciatino, Weeping, Punteruolo, Razzaio, Rossellino, Rossello, St. Francis, St. Catherine, Scarlinese, Tondello and their synonyms. Other varieties can also compete for up to 5%.

The additional geographical mention “Seggiano” is reserved for the extra virgin olive oil “Toscano” obtained from olives from olive groves composed of the Variety Olivastra Seggianese. Olives of other varieties used as pollinators in olive groves to a maximum of 5% are also allowed.

The additional geographical mention “Lucchesi Hills” is reserved for the extra virgin olive oil “Toscano” obtained from the olives of the following varieties: Frantoio or Frantoiana up to 90%, Leccino up to 20%. Olives from other olive varieties in olive groves can also compete by up to 15%.

The additional geographical mention “Hills of Lunigiana” is reserved for the extra virgin olive oil “Toscano” obtained from the olives of the following varieties: Frantoio or Frantoiana up to 90%, Leccino up to 20%. Olives from other olive varieties in olive groves can also compete by up to 15%.

The additional geographical mention “Arezzo Hills” is reserved for the extra virgin olive oil “Toscano” obtained from the following varieties present, alone or jointly, in the olive groves for at least 85%: Frantoio Moraiolo and Leccino. Other varieties can also compete by up to 15%.

The additional geographical mention “Senese Hills” is reserved for the extra virgin olive oil “Toscano” obtained from the following varieties present, alone or jointly, in olive groves for at least 85%: Correggiole or Frantoio, Moraiolo, Leccino, Olivastra. Up to 15% of varieties can compete: Maurino, Pendolino, Morchiaio, Mignolo, along with other native varieties.

The additional geographical mention “Colline di Florence” is reserved for the extra virgin olive oil “Toscano” obtained from the following varieties present, alone or jointly, in olive groves up to 100%: Frantoio, Moraiolo, Leccino, Pendolino, Leccio del Horn, Madonna of the Impruneta, Morchiaio, Maurino, Weeping, Pesciatino, and their synonyms. Other varieties, as long as they are native, can compete for up to 15% as: American, Arancino, Cherry, Cluster, Gremignolo, Grossolana, Larcianese, Lazzero, Leccione, Marzio, Melaiolo, Pinky, Olivastra Seggianese, Punteruolo, Razzalo, Rossellino, Rossello, St. Francis, St. Catherine, Scarlinese, Tondello and their synonyms. All other varieties among those mentioned in article 1 of art can also compete. 2 by a maximum of 5%.

The additional geographical mention “Montalbano” is reserved for the extra virgin olive oil “Toscano” obtained from the following varieties present, alone – or jointly, in olive groves up to 100%: Leccino, Moraiolo, Frantoio, Pendolino, Rossellino, Weeping and their sinful.

The additional geographical mention “Monti Pisani” is reserved for the extra virgin olive oil “Toscano” obtained from the following varieties present, alone or jointly, in olive groves up to 85%: Frantoio, Moraiolo, Leccino, Rocket.

Cultivation

The environmental and culture conditions of olive groves for the production of extra virgin olive oil with a protected geographical indication “Toscano” and additional geographical mentions must be the traditional ones and characteristics of the area and, however, the olives and the derived oil are designed to give the specific quality characteristics.

The sestiof planting, breeding forms and pruning systems must be those generally used or, in any case, to not change the characteristics of olives and oil. In particular, new plants, in addition to traditional forms of breeding, are allowed new forms provided specifically authorized by the Tuscany Region.

Production

The harvesting of olives for the production of extra virgin olive oil with a protected geographical indication “Toscano” takes place directly from the plant by mechanical means or
burning.

Olives for the production of extra virgin olive oil must be washed at room temperature; any other treatment is prohibited.

For the extraction of extra virgin olive oil, only mechanical and physical processes are allowed to ensure the obtaining of oils without any alteration of the qualitative characteristics present in the fruit.
