Mountain Bean
The Mountain Bean is a Traditional Agricultural Product (PAT) on the national list approved by the Ministry of Agriculture And Forestry, whose requirements are regulated by the region’s production regulations Tuscany.
Features
The mountain bean has a very large kidney seed (about 3 cm); the color is yellow tending to greenish, has sour taste and strong smell.
The consistency is hard; July and August.
Cultivation
The traditionality of the product is given by the peculiarity of the cultivar that perfectly adapts to the pedoclimatic characteristics of the place.
The self-production of seeds ensures the maintenance of the characteristics of the native ecotype.
It is often eaten with sausage, onion or simply boiled with salt and pepper, accompanied with local red wines.
The mountain bean is produced only at the hobby level by some growers in the province of Siena, in particular the area of the Amiata Siena and the Val d’Orcia.
