Extra virgin olive oil

The Protected Designation of Origin “Sardinia” is reserved for extra virgin olive oil extracted in the areas of Sardinia indicated in the production specification and obtained for 80% from the Bosana, Tonda di Cagliari, Nera (Tonda) di Villacidro, Semidana and their synonyms. The remaining 20% contribute to the minor varieties present in the territory, which however must not affect the final characteristics of the product.

The soil and climatic and cultivation conditions of the olive groves destined for the production of the oil must be suitable for giving the olives and oil the traditional quality characteristics. In particular, for the fight against olive pests, guided fighting techniques must be implemented, while weeds are controlled with the technique of aridoculture and always respecting the principles of the guided struggle.

For olive groves suitable for the production of extra virgin olive oil D.O.P. “Sardinia” is allowed a maximum production of olives of 120 quintals / ha, with a maximum yield of olives in oil of 22%.

The “Sardegna” Protected Designation of Origin oil must meet the following characteristics:

  • acidity in oleic acid ≤ 0.5%;
  • number of peroxides ≤ 15;
  • total polyphenols ppm ≥ 100;
  • tocopherols ppm ≥ 100;
  • color from green to yellow with chromatic variation over time;
  • fruity smell;
  • fruity flavor with hints of bitter and spicy;
  • panel test ≥ 7.
