Cappone Bean

The Cappone Bean is a Traditional Agricultural Product (PAT) on the national list approved by the Ministry of Agriculture And Forestry, whose requirements are regulated by the production discipline of the Tuscany Region.

Features

The Cappone bean is a bean with determined growth and scalar maturation.
The ripening pod is colored, ranging from cream white to light yellow.
It is similar to cannellino but larger (about 12-13 cm long by 1 cm wide).
The seed has a slightly kidney shape and is matte white as cannellino.
Very delicate bean, characterized by a soft paste, the absence of “peel” and a very intense flavor.

Cultivation

It was sown in the midst of corn; the two plants were sown together and in this way the use of the soil was maximized and the bean, under the corn, found a cool environment ideal for its development.
No irrigation was carried out also because the crops were made in fresh soils and with the relatively shallow aphland.

The collection, manual, was carried out by removing the entire plant during drying.
The plants were brought to the wing and were defoliated manually; With this operation they also removed the pods not perfectly ripe and, therefore, they made bunches that were attached to the “trische”, poles hanging under the gutters of the farmhouses on the walls exposed to the south; in this way the beans were dried and, therefore, separated the pods from the seeds beating the mass with the “correct” tool formed by two sticks joined together by a piece of leather (it corrects it).
Then the seed was separated from the other residues through the use of stuns and the “arbolo”, a wooden container with which beans were flown in the air to eliminate lighter impurities.

The product was then stored in glass containers (damigian type) with the addition of pepper as a preservative.
The bean was then consumed as a dry product.

The bean cappone was grown in the plain of Lucca where it was produced mainly in medium dough soils tending to the sandy.

There are few fans left to grow this bean intended for self-consumption.
